White Bean Dip with Sumac Onions

A super healthy fragrant White Bean Dip topped with sumac onions, which can be prepared in less than 10 minutes, ideal for your next hosting party or as a weekday snack!

Ingredients

White Bean Dip

  • 400 g cannellini beans butter beans/navy beans 1 can
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • zest of one lemon
  • 2 garlic cloves small
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3 tbsp cold water if needed

Sumac Onions

  • 2 red onions large
  • 1 tbsp sumac
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 1/2 tbsp lemon juice
  • 1/4 cup parsley

Instructions

Sumac Onions

  • Peel and slice the red onions thinly. Place in a bowl with the sumac and salt. Massage the onions well with your hands.
  • Add the olive oil, lemon juice and parsley. Mix well to combine. Set aside.

White Bean Dip

  • Add the white beans, lemon, garlic, olive oil, salt and pepper to a food processor or blender. Blend until smooth. Add a tablespoon of water at a time, if you want a creamier thinner dip.

Assemble

  • Serve the white bean dip into a shallow bowl and swirl the top with a spoon. Place a handful of sumac onions on top with some extra beans. Finish it off with a drizzle of extra virgin olive oil. Serve with some crackers or vegetables. Enjoy!
