- 2 pears sliced
- 1 tbsp olive oil
- 1 tsp honey
- 115 g gorgonzola cheese extra for garnish
- 225 g cream cheese
- 120 g greek yogurt
- 50 g walnuts chopped
- 1/2 tsp fresh thyme
- 1/2 tsp fresh sage
- 1 tsp salt
- 1/2 tsp pepper
Preheat oven to 200°C/400°F. Toss the sliced pears with olive oil and honey. Roast on a baking sheet for 15–20 minutes, until caramelized and tender. Let cool slightly.
In a food processor, combine the cream cheese, the greek yogurt, and the gorgonzola. Blend until smooth.
To the food processor, add most of the roasted pears (reserve a few slices for garnish) and blend again until incorporated. Taste and season with salt and pepper.
Transfer to a serving bowl. Top with some gorgonzola crumbles, toasted walnuts, reserved pear slices, and a drizzle of honey. Sprinkle with thyme and sage. Serve with crostini or crackers for dipping.
