A super healthy fragrant White Bean Dip topped with sumac onions, which can be prepared in less than 10 minutes, ideal for your next hosting party or as a weekday snack!
Peel and slice the red onions thinly. Place in a bowl with the sumac and salt. Massage the onions well with your hands.
Add the olive oil, lemon juice and parsley. Mix well to combine. Set aside.
White Bean Dip
Add the white beans, lemon, garlic, olive oil, salt and pepper to a food processor or blender. Blend until smooth. Add a tablespoon of water at a time, if you want a creamier thinner dip.
Assemble
Serve the white bean dip into a shallow bowl and swirl the top with a spoon. Place a handful of sumac onions on top with some extra beans. Finish it off with a drizzle of extra virgin olive oil. Serve with some crackers or vegetables. Enjoy!
