- 160 g olives
- 100 g mango
- 1 garlic clove
- 1 tbsp parsley
- 1 medium chili pepper
- 30 ml olive oil
- 20 ml water
- 1 tbsp lemon juice
- 1 tbsp honey
- 1/2 tsp salt
- 1/2 tsp black pepper
Chop the mango add to a blender together with the water, olive oil, honey, lemon, garlic, salt and pepper. Blend until smooth.
Add the mixture to the olives and add the chopped red chili peppers and parsley. Give everything a good stir. Store in the fridge for at least 4 hours. When ready to serve, shake the container. Use any leftover marinade as a salad dressing!
