Chili Mango Olives

Ingredients

  • 160 g olives
  • 100 g mango
  • 1 garlic clove
  • 1 tbsp parsley
  • 1 medium chili pepper
  • 30 ml olive oil
  • 20 ml water
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Chop the mango add to a blender together with the water, olive oil, honey, lemon, garlic, salt and pepper. Blend until smooth.
  • Add the mixture to the olives and add the chopped red chili peppers and parsley. Give everything a good stir. Store in the fridge for at least 4 hours. When ready to serve, shake the container. Use any leftover marinade as a salad dressing!
