Tomato Salad with Smashed Marinated Olives and Ricotta Cheese

Ingredients

  • 800 g tomatoes
  • 150 g marinated olives
  • lemon zest
  • 1 small red onion finely sliced
  • handful of fresh dill finely chopped
  • 1 tbsp lemon juice
  • 100 g ricotta cheese
  • 3 tbsp olive oil More as needed
  • salt and pepper to taste

Instructions

  • Either cube or slice the tomatoes, and finely slice the red onion. Place in a serving bowl.
  • With the back knife of a knife smash the olives. And add to the serving bowl.
  • Add the lemon juice, olive oil and season with salt and pepper.
  • Gently scoop dollops of ricotta cheese, add the lemon zest and fresh dill on top. If needed add more oil on top.
