- 800 g tomatoes
- 150 g marinated olives
- lemon zest
- 1 small red onion finely sliced
- handful of fresh dill finely chopped
- 1 tbsp lemon juice
- 100 g ricotta cheese
- 3 tbsp olive oil More as needed
- salt and pepper to taste
Either cube or slice the tomatoes, and finely slice the red onion. Place in a serving bowl.
With the back knife of a knife smash the olives. And add to the serving bowl.
Add the lemon juice, olive oil and season with salt and pepper.
Gently scoop dollops of ricotta cheese, add the lemon zest and fresh dill on top. If needed add more oil on top.
