A quick salad with a deep flavour profile. This Tomato Salad with Smashed Marinated Olives and Ricotta Cheese is the perfect addition to a warm summer night!

Here in Luxembourg these past days we have been experiencing exceptional high temperatures, it’s actually a bit of a phenomenon on mainland Europe. Coming from the Mediterranean, people assume that we are used to this but this is way different, especially as Luxembourg is built to keep warm not like Malta. As in our apartment we don’t have any AC, it’s making cooking a bit more difficult. We have been mainly bbq-ing on our terrace or just enjoying a non-cook dinner.

This salad turned out to be such a great meal to enjoy during this heatwave. A simple easy salad that can be enjoyed as or else as a side dish! The base of this salad are the first summer tomatoes I could find, straight from France! The second main ingredient are the smashed marinated olives. Using marinated olives is an extra touch as even normal ones will work just as delicious, although switching to marinated ones can make this salad more fun each time you make it! I’m obsessed with marinated olives, in fact you can find several ones here on the website and more will be coming soon. Use any marinated olives that you like and have fun playing with the flavours in this salad.

How to serve this salad
I like to serve this salad as an appetizer with plenty of bread to pick up all the delicious salad on top. Alternately, you can also serve it as a side salad with any of your favourite dishes. This salad goes wonderfully well with chicken or fish

Can I use a different cheese?
Of course! Here I use ricotta as I find that it pairs perfectly with the salty strong flavor profiles of the other ingredients in particular, the marinated olives. However, there are plenty of more cheeses which work just as good, such as; burrata, straciatella, mozzarella balls, goat cheese or even Halloumi for a more salty twist.

Tomato Salad with Smashed Marinated Olives and Ricotta Cheese
Ingredients
- 800 g tomatoes
- 150 g marinated olives
- lemon zest
- 1 small red onion finely sliced
- handful of fresh dill finely chopped
- 1 tbsp lemon juice
- 100 g ricotta cheese
- 3 tbsp olive oil More as needed
- salt and pepper to taste
Instructions
- Either cube or slice the tomatoes, and finely slice the red onion. Place in a serving bowl.
- With the back knife of a knife smash the olives. And add to the serving bowl.
- Add the lemon juice, olive oil and season with salt and pepper.
- Gently scoop dollops of ricotta cheese, add the lemon zest and fresh dill on top. If needed add more oil on top.
