The best seasonal summer tomato and bean salad to enjoy as a lunch or as a side on a warm day! Ready in few minutes but rich in flavour and nutrients.

Every summer when good weather brings juicy fresh seasonal produce, I crave quick easy meals to make good use of this goodness. Most of the time I end up using tomatoes and from my past recipes, you can find several other recipes which make use of such delicious ripe tomatoes. Tomatoes are a great base, when they are in season they need minimal work and you still get a wonderful bursting flavour. For this salad I opted to add a bit more protein and make it heartier by adding beans! Apart from adding a great amount of nutritional value, beans make this salad more filling thus you can make this as a quick lunch instead of as a side dish. I also loaded this salad up with fresh herbs, as they bring brightness and a herby touch which definitely lifts this salad to a superior level!

How to serve this summer salad?
I like to serve this salad as an appetizer with plenty of bread to pick up all the delicious salad on top. Alternately, you can also serve it as a side salad with any of your favourite dishes. This salad goes wonderfully well with chicken or fish.

Can I use another dressing?
Of course! Here I am using a classic dressing. However, you can choose any dressing that you like!
How to store any leftover salad?
Store any leftover salad in an airtight container for not more than 3 days in the fridge. The tomatoes may start to lose more their juices so I suggest to eat this salad as soon as you can.

Summer Tomato and Bean Salad
Ingredients
- 500 g tomatoes of your liking
- 1 can white beans cannellini
- 5 small golden peppers chopped
- 1 shallot diced
- 2 tbsp parsley chopped
- 1 tbsp dill chopped
- 1 tbsp basil chopped
Mustard dressing
- 2 tbsp mustard
- 4 tbsp olive oil
- 1 tsp lemon juice
- 1/2 tsp salt
- 1 tsp black pepper
- Burrata or mozzarella cheese optional
Instructions
- Cube the tomatoes and add to the bowl. Prepare the herbs and peppers and add them to the same bowl. Add the beans.
- In a jar add all the dressing ingredients, shake it well until everything is combined together.
- Add the dressing to the salad and mix everything well.
- Serve the salad on a plate with a protein or with your favourite cheese such as burrata. Drizzle some extra olive oil over everything.
