A fresh salad made with a mix of in season ripe and flavourful tomatoes, topped with a light and zesty dressing and chunks of soft and creamy burrata cheese.
Even though tomatoes can be found all year round, they are best during the summer months of July and August. During the summer months in fact, these fruits are way more delicious as they are more plumper and juicier and they actually don’t need that much to be enjoyed fresh. This is why today’s post is more of a guideline on how to enjoy them, rather than a specific and difficult recipe. This tomatoes and burrata salad recipe is so easy to make and can be served either as a meal on its own or as a side. I have enjoyed mine as a meal, as unfortunately, in my house there is a tomato hater!
Preparing the salad
It is ideal to prepare this salad only a few minutes before serving so that it doesn’t lose too much water and get a soggy tomato salad instead. All you have to do is simply slice your selection of tomatoes. Here I’ve used a mix of different types and colourful tomatoes, such as green zebra, yellow, orange and some heirloom tomatoes. However you can do this recipe with any tomatoes you have available. You can for instance use just heirloom tomatoes, which are one of my favourite tomatoes to use in this salad.
Prepare the dressing and drizzle all over the tomatoes. Finally add the burrata, you can either leave it whole or else, cut into chunks. Finally season with some flaky salt, pepper and lemon zest on top. I also, like to add a couple of basil leaves for an extra touch of freshness. Just before serving I like to drizzle more olive oil on top of everything.
Tip: How to store tomatoes
To keep all of the tomatoes flavour and texture, store them outside the fridge away from direct sunlight. Unlike the popular belief to store tomatoes in the fridge, if you actually do so, tomatoes will lose their flavour and get that unpleasant mealy texture. On the other hand, if you have overripe and cut tomatoes, they can be stored in the fridge. Either way, tomatoes are best if eaten a few days after you buy them.
Tomatoes and Burrata Salad
Ingredients
- 500 g tomatoes mix a bunch of colourful ones
- 150 g burrata
- Basil
- Lemon Zest
- Salt & Pepper
Dressing:
- 2 tbsp olive oil
- juice of half a lemon
- 1 tsp oregano
- 1 tsp basil
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Prepare the dressing by mixing all the ingredients together and set aside.
- Slice all the tomatoes and drizzle the dressing on top.
- Cut the burrata in chunks and place on top of the tomatoes with the dressing.
- Season the salad to taste with salt and pepper, add a couple of fresh basil leaves and zest some lemon.
- Finally, drizzle some extra olive oil and serve immediately. Enjoy!
