Looking for a quick dip to make? This savoury salty creamy feta dip, topped with a sweet roasted red peppers salsa to balance all the flavours, is what you need! To be enjoyed with some pita chips, crackers or crusty bread.
Feta cheese is one of the most versatile cheeses out there! It’s used in so many ways and recipes for its creamy crumbly texture and salty taste. I like to include it on top of my salads, in my wraps and gyros, or else in baked goods. You get it, it’s a cheese that it’s so easy to work with! Therefore, what’s left? Making it a dip! Lately, I’ve been seeing this feta dip everywhere and I knew I had to give it my own spin. As the feta in itself is quite salty, I decided to load it with a sweet and slightly spicy roasted red peppers salsa. Together they make a great addictive combination! So addictive that I ate half of this dip alone while photographing the dip. Sorry not sorry!
Whipped Feta Dip
Making the dip is relatively easy and fast. All you need is to place all the ingredients in a food processor or blender. Mix it until you get a creamy and smooth texture, or else stop mixing slightly before, if you want a chunkier dip. Let’s break down the ingredients.
Feta Cheese – the better quality it is, the better the dip tastes! The feta is the main star here so choose wisely.
Greek yogurt – is what helps the feta cheese break down and makes the dip creamy.
Olive oil – any good tasting olive oil will give the richness this creamy dip is missing.
Garlic – fresh all the way!
Lemon – a squeeze of fresh lemon for that acidic hit.
Salt and pepper – this is all up to you and the feta cheese you buy! An important tip, taste well before adding any salt and add it gently!
If you have any leftover dip, store it an airtight container for not more than 5 days. Other ways to use this dip is in sandwiches and wraps, as a salad dressing, in healthy bowls or even with pasta.
Roasted Red Peppers Salsa
This salsa is AMAZING! I have to be honest, I’m slightly in love with roasted red peppers and use them in plenty of ways and always find an excuse to eat them. I created this salsa with some roasted red peppers which I had after testing some recipes.
Chop up the red peppers finely, these should be small pieces. Add them to a bowl with olive oil, minced garlic, chili and tarragon. I used tarragon as its pungent taste brings out more the sweetness of the red peppers. However, if you are not a fan of this herb you can either use parsley or coriander.
Make at home – Roasted Red Peppers
In this recipe, the roasted red peppers are a sweet condiment which balances perfectly with the strong flavour and the saltiness from the feta cheese. You can use ready bought jarred roasted red peppers, however they’re easy to make fresh at home, as I did!
If you want to make yourself the roasted red peppers, read along and don’t be intimidated as it’s one of the simplest things you can cook. If you have a gas stove, place the pepper directly on the gas burner, turning frequently until all the skin is all nicely charred. We want the pepper’s skin to be black! Do not let the pepper on flames unattended!
You can also do this charring peppers in the oven. Turn the oven to its highest temperature setting, lightly brush the peppers with oil and salt. Place the peppers in a parchment lined baking sheet and roast in the oven for at least 30 minutes. Ideally use oil that has a high smoking point such as canola oil, sunflower oil or vegetable oil. Do not use olive oil as it will burn quickly. Turn frequently so that you get a uniform char on the pepper. In addition, it’s best to place the baking sheet at the top of the oven so that peppers can easily get some nice char. As this is what we want.
Once roasted and you have a nice char on them, place the hot peppers in a bowl and cover with cling film or aluminium foil. Let them rest until cool. Gently remove the skins and the seeds from the inside of the pepper.
Feta dip with roasted red peppers salsa
Ingredients
Red pepper salsa
- 1 1/2 red peppers jarred or fresh
- 2 tablespoons olive oil
- 1 garlic clove
- 2 teaspoons tarragon
- 1 teaspoon chili
Feta dip
- 200 g feta
- 80 ml greek yogurt
- 2 garlic cloves minced
- 2 tablespoons olive oil
- 2 tablespoons lemon
- Salt and pepper to taste
Instructions
Feta dip instructions
- Place all the ingredients into a blender or mixer and let it blend for a few minutes until the mixture is nice and smooth. Store in the fridge until ready to use.
Red pepper salsa instructions
- Chop finely the roasted red peppers and add to a bowl.
- To this bowl add all the remaining ingredients and mix well together. Store in the fridge until ready to use.
Assembly
- Layer generously the feta bowl in a shallow bowl or plate.
- Drizzle on top some of the red pepper salsa together with some of its oil on top. Finish it off with fresh cracked pepper and nigella seeds. Serve with pita chips or crusty bread. Enjoy!
