These Citrus marinated olives are a bright and aromatic appetizer which is ready in minutes! Simply let the marinade work its magic, and you’ll end up with wonderfully flavourful olives.

Over the past couple of months, I’ve been testing all sorts of marinated olive combinations. Olives have always been an appetizer I naturally gravitate toward, so creating different marinades for different occasions feels only fitting. And since I seem to go through endless oranges during the festive season, I decided to make a citrus marinade to put any extras to good use; and I’m happy to say it was a great decision!
The orange and lemon bring a bright, aromatic lift to the olives, while the chili and coriander seeds add a warm, subtle kick. After making them, I found myself constantly returning to the fridge for “just one more.” They for sure won’t last for long!

Ingredients for these Citrus Marinated Olives
- Olives: they are the main ingredient so I suggest that you use the best quality ones. I opt for a mix of green and kalamata olives, however you can also use just one type of olives. I tend to use pitted olives as I always have kids around when I make these, however, you can use non pitted olives just as well.
- Coriander Seeds: a few crushed coriander seeds add another level of flavour and with its floral and nutty aroma it balances well with this savoury yet sweet appetizer.
- Olive oil: only the best! It will be used for the marinade of these olives which will help add a deeper flavour to the olives.
- Orange juice and peel: the main citrus element of this marinade. I would opt for a sweet variety of orange, as bitter oranges can make this marinade too strong. With sweet orange juice, the olives become delicate and the peel gives that slight acidic touch which work wonderfully.
- Lemon juice and zest: a citrusy and acidic touch is needed to make this marinade.
- Chili Flakes: a touch of spice makes everything better!
- Chili pepper: this is totally optional, but I love the subtle kick it gives to these olives, also it makes this appetizer so pretty and colourful!

How to store?
Store in the fridge for up to 7 days in an airtight container with the marinade. Before serving take out 5 minutes before so that any solidified oil will melt. Add a drizzle of olive before serving.

How to serve these olives?
These marinated olives are perfect to be served as an appetizer during the festive season. Add them to a platter or a board with other nibbles, serve them as a party food, or even include them in your favourite salad or sandwich. You can also just serve them with crusty bread so that you can scoop up the delicious marinade as a dipping oil. Or else you can simple nibble on them whenever you are craving something savoury.

Citrus Marinated Olives
Ingredients
- 400 g olives
- juice from an orange about 100ml
- orange peel thin strips
- zest of a lemon
- 1 tbsp lemon juice
- 5 tbsp olive oil
- 1 tsp chili Flakes
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp coriander seeds
- one chili pepper sliced
Instructions
- Place the olives into a large jar or container. Crush the corainder seeds until most of them are broken. Bash the garlic cloves, if you have large cloves, cut them smaller. Prepare the orange peel and zest.
- Add everything to the olives and give everything a good stir. Store in the fridge for at least 2 hours. When ready to serve, shake the container, and drizzle extra olive oil and add the sliced chili pepper on top.
