These Strawberry Cream Pastries are a beautiful spring sweet dessert. Flaky puff pastry is filled with a luscious velvety vanilla whipped cream, topped with pistachios and strawberries.

What are these Strawberry Cream Pastries?
If you are looking for a simple dessert but yet a showstopper, you need to try this one!
Made from basic ingredients and doesn’t require a lot of skill or detail to make. However, if using good quality fresh ingredients, the flavour will be incredible! The base of this recipe is the puff pastry shell, made from two pieces of dough baked together and then sliced in half after baking. The base layer is then filled with a smooth creamy vanilla whipped cream, then topped with chopped pistachios and sliced strawberries. It’s best to use seasonal fresh fruit as their extra sweet flavour will make this dessert so much better! The other layer of puff pastry is then placed on top and generously dusted with icing sugar.


I suggest to eat this with a fork or hold a plate close by as it can get messy easily! Although, all is worth to enjoy such a sweet delicate dessert.

Here is an alternative!
For this appetizer, I opted to go with a store bought one, as I wanted to keep it as quick and easy as possible. However, you can easily make the dough yourself. The one which I would opt for is this flaky dough below, as I adore how crumbly this type of dough gets, and personally I just love picking up the fallen crumbs from the plate. Besides, this dough is so easy to make and I have used in it in multiple recipes such as: Leek, Mushroom and Feta Hand Pies and Quick Ġbejniet and Peas Puff Pastries .
Pie Dough
- 350 g plain flour
- 230 g cubed cold butter
- 1 tsp salt
- 5 tbsp cold water
- In a large bowl mix together the flour and salt. Add the cubed cold butter and work into the flour. Rub in all the butter in the flour until you have a coarse mixture with small pebbles of butter.
- Slowly start adding a tablespoon at a time of cold water, while forming a smooth dough. Your dough might require less or more water. Once the dough is ready, wrap into some cling film and store in the fridge for at least an hour or two.

FAQs
Can I prepare the pastries in advance?
You can prepare the pastries in advance, however, I don’t recommend preparing them for more than a day in advance, as the more they sit the more the puff pastry gets soggy. Although, you can easily prepare all the ingredients at least 3 days in advance and assemble them before serving! Store the whipped cream in air tight container in the fridge, while the unfilled puff pastries can be stored at room temperature.

Can I use other fruit instead of strawberries?
Most definitely! I have strawberries as I adore them with the vanilla whipped cream and pistachios. However, other fruit which also goes wonderful with whipped cream in my opinion are grapes, mangos, kiwi, oranges and peaches. Any fruit you chose from these will make a delicious dessert. You can also swap the nuts with others to your liking!

Strawberry Cream Pastries
Ingredients
- 1 large sheet puff pastry 300g
- egg wash (egg + 1 tablespoon milk)
- 500 ml heavy cream
- 80 g icing sugar + extra for dusting
- 1/2 tsp vanilla extract
- 60 g pistachios chopped
- strawberries sliced
Instructions
Bake the puff pastry
- Preheat the oven to 200°C or 400°F. Line a baking tray with parchment paper. Set aside.
- Cut the puff pastry into 12 equal stripes rectangles. Brush each one with the egg wash. Place two pieces of the cut puff pastry on top of each other (you should now have 6 pastries).
- Bake for around 15-20 minutes. Once they have a nice golden brown colour, take them out and let them cool completely.
Prepare the Whipped Cream Filling
- Place the heavy cream, icing sugar and vanilla into a bowl. With an electric whisk or in a stand mixer whip the mixture to stiff peaks. Transfer to a piping bag with your favourite nozzle and place in the fridge until ready to use.
Assemble
- Slice the cooked pastries horizontally. With the piping bag, pipe the whipped cream on the bottom layer. Sprinkle on top the pistachios and add the sliced strawberries.
- Add the other puff pastry layer and dust generously with icing sugar.
