Another recipe perfect for these warm nights! During summer I’m a big fan of large fresh salads along my protein, especially when we make a BBQ. This salad is an ideal side to have with such meals. Apart from it being extremely easy to prepare and with few ingredients, the salad is packed with fresh flavours.
How to make this avocado and cucumber salad?
This is one of the easies salads you can ever make! Start by prepping my avocado and cucumbers. I like to chop mine into equal pieces, however, you can do any shape that you like! I would recommend to make them as bite sizes though. Slice the green onions thinly. Once the vegetables are prepped, add them to a large bowl. Add in the other ingredients and mix well until everything is combined. The salad should have a glossy shine to it and the avocado should break up slightly. Serve the salad immediately once ready. However, if you are preparing it in advance, cover the bowl tightly and store in the fridge. Make sure that the salad is well mixed so that the avocado doesn’t start to brown!
Can I store leftover salad?
Yes! If you have any leftover salad, place in an air tight container and store in the fridge for no more than 3 days. You can then eat the salad as is, or else add some extra olive oil to bring it back more to life.
How to serve this avocado and cucumber salad?
You can serve this salad as a side to any meal. Or else you can have it as a main dish by adding some protein to it like chicken or prawns.
Avocado and Cucumber Salad
- 2 spring onions
- 1 medium cucumber
- 2 avocados
- 2 tbsp lemon/lime juice
- 1 tsp chili flakes
- 1 tsp sea salt flakes
- 1 tsp black pepper
- 2 tbsp olive oil
- cilantro optional
- Start by preparing all the vegetables. Chop and dice the avocado and the cucumber to your liking.
- Slice thinly the spring onions.
- Add them to a large bowl. To the bowl add the other remaining ingredients. Mix well until everything is combined and the salad has a silky gloss to it.
- Serve immediately. If not serving immediately, store covered in the fridge.
